  1. Rinse chicken: pat dry.
  2. Use a sharp knife to cut a small pocket in the thickest side of each chicken breast.
  3. Insert a mozzarella slice in each pocket.
  4. In a small mixing bowl beat egg white slightly.
  5. In another bowl stir together flour, Parmesan cheese, parsley, paprika and pepper.
  6. Dip chicken in egg white.
  7. Then, coat with flour mixture.
  8. Spray a baking dish with nonstick coating.
  9. Arrange chicken in dish.
  10. Bake in a 375°F oven for 20 to 25 minutes or till chicken is tender and no longer pink.
