Makes 48 bars.
Ingredients
- 1 8-ounce package cream cheese, softened
- 3 ounces bleu Cheese, crumbed (3/4 cup)
- 2/3 cup pitted ripe olives, divided
- 3 cups cooked rice
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/3 cup finely chopped walnuts
- 2 tablespoons chopped parsley
Directions
Blend cheeses. Chop 1/3 cup olives; stir into Cheese mixture. Add rice, eggs and salt. Spread into buttered 13x9-inch baking pan. Top rice mixture with nuts, parsley and remaining 1/3 cup olives, sliced. Bake at 350 degrees 20 minutes, or until set. Chill one hour. Cut into 1-1/2 by 1-inch bars.
