- 1 tbsp olive oil
- 1 cup minced Onion
- 1 cup Grated Carrot
- 1 cup grated turnips
- 1 cup grated zucchini
- 1 cup grated beets
- 1/2 tbsp minced garlic
- 1/2 tbsp ground cumin
- 1 tbsp dill
- 1 tbsp tarragon
- 1/4 cup instant oats
- 1/4 cup water
- 1 to 1 ½ cups mashed
- potatoes
- 1/4 cup chopped hazelnuts
- 1/3 cup cooked rice
- salt & pepper to taste

Saute Onion, carrots, turnips, zucchini, beets, garlic, cumin, and herbs until vegetables begin to wilt (3 - 5 minutes). Allow to cool slightly. Soak Oats for 5 minutes in water - drain & press out water. Add to vegetable mixture along with potatoes, nuts, and rice. Season with salt and pepper to taste. Form into 8 patties.
