  1. Cut chicken in thin strips.
  2. Heat butter in large skillet.
  3. Add chicken and cook, stirring, about 3 minutes.
  4. Add celery, onions, spinach and Chinese vegetables; cook only until tender crisp.
  5. Mix cornstarch with chicken broth; add to chicken mixture.
  6. Cook, stirring, until clear and thickened.
  7. Stir in soy sauce.
  8. Season to taste.
  9. Serve over fluffy rice.
