- Score the meat deeply with a sharp knife, season well.
- Fry briskly in hot butter. Remove from the pan and keep hot.
- Fry two rashers of Bacon and the banana cut in four.
- Serve the Chicken on a hot dish, with the Bacon on top, and then the browned banana, with Potato crisps round.
- Garnish with parsley or watercress.
