Chicken and banana

  1. Score the meat deeply with a sharp knife, season well.
  2. Fry briskly in hot butter. Remove from the pan and keep hot.
  3. Fry two rashers of Bacon and the banana cut in four.
  4. Serve the Chicken on a hot dish, with the Bacon on top, and then the browned banana, with Potato crisps round.
  5. Garnish with parsley or watercress.
