This recipe uses edible papaya seeds which add a peppery taste.

Ingredients[]
- 4 roast chicken breast halves, boned and sliced
Slaw[]
- ¼ cup mayonnaise
- ¼ cup orange juice
- 2 tsp white vinegar
- ½ tsp each salt and pepper
- 1 papaya, seeds reserved, sliced
- 4 cups coleslaw mix
- 1 red bell pepper, thinly sliced
- ½ cup coarsely chopped cilantro
Mojo sauce[]
- 1 cup cilantro leaves
- ⅓ cup orange juice
- 2 tbs olive oil
- 1 clove garlic
- ¼ tsp each salt, paprika, cumin

Slaw[]
- Whisk first 5 ingredients in a bowl.
- Add remaining ingredients, toss to mix and coat.
Mojo sauce[]
- Blend ingredients in a blender until cilantro is very finely chopped.
- Spoon sauce over chicken.
- Serve with the slaw, sprinkled with papaya seeds.
