Makes 6 servings
- 3 cups hot cooked rice
- 2 chipotle chiles en adobo, finely minced
- 1/2 cup corn kernels
- 1 tablespoon minced cilantro
- 1/2 cup grated sharp Cheddar Cheese
- In large bowl, combine rice, chiles, corn and cilantro; mix well.
- Serve topped with Cheese.
