I will unequivocally say that the most delicious fast-food dessert is a McDonald’s hot fudge sundae. Rich, warm, gooey, decadent chocolate sauce cascading over a cool bowl of melting ice cream. Come on! There is nothing better. My sister (who also will never pass up this fast-food dessert) and I have discussed this at length—the thing that makes this over-the-top delicious is its satisfying thickness. That’s what I’ve recreated here—except, dare I say, better. It’s all the qualities of the fast-food sundae sauce but with the added nuance and depth of cardamom. This spooned over a scoop of Orange Fennel Ice Cream is a dessert that McD’s cannot beat.

  1. In a small saucepan, whisk together the cocoa powder, sugar, and salt.
  2. Pour in the water, stir to mix, and bring to a boil over medium heat, stirring constantly and scraping down the sides of the pan with a rubber spatula for an even texture.
  3. Reduce the heat to a simmer and continue stirring and scraping for about 30 more seconds.
  4. Stir in the cardamom, remove from the heat, and let cool for about 10 minutes.
  5. Use immediately, or let cool to room temperature and store in an airtight container in the refrigerator for up to 2 weeks.
