I will unequivocally say that the most delicious fast-food dessert is a McDonald’s hot fudge sundae. Rich, warm, gooey, decadent chocolate sauce cascading over a cool bowl of melting ice cream. Come on! There is nothing better. My sister (who also will never pass up this fast-food dessert) and I have discussed this at length—the thing that makes this over-the-top delicious is its satisfying thickness. That’s what I’ve recreated here—except, dare I say, better. It’s all the qualities of the fast-food sundae sauce but with the added nuance and depth of cardamom. This spooned over a scoop of Orange Fennel Ice Cream is a dessert that McD’s cannot beat.

- ½ cup unsweetened natural cocoa powder
- 1 cup granulated cane sugar
- ½ teaspoon salt
- ½ cup water
- 1 teaspoon ground cardamom
Directions[]
- In a small saucepan, whisk together the cocoa powder, sugar, and salt.
- Pour in the water, stir to mix, and bring to a boil over medium heat, stirring constantly and scraping down the sides of the pan with a rubber spatula for an even texture.
- Reduce the heat to a simmer and continue stirring and scraping for about 30 more seconds.
- Stir in the cardamom, remove from the heat, and let cool for about 10 minutes.
- Use immediately, or let cool to room temperature and store in an airtight container in the refrigerator for up to 2 weeks.
