You cans serve these plain or topped with vanilla ice cream and chocolate minichips.

  1. Coat waffle iron with cooking spray, and preheat.
  2. Lightly spoon flour into a dry measuring cups; and level with a knife.
  3. Combine flour, baking powder, and salt in a large bowl.
  4. Place milk, butter, vanilla, and egg yolk in a bowl; stir with a whisk.
  5. Add to flour mixture, stirring until blended.
  6. Beat egg white and sugar with a mixer at high heat until stiff peaks form.
  7. Fold into flour mixture.
  8. Fold in minichips.
  9. Spoon about 1/2 cup batter onto hot waffle iron, spreading batter to edges.
  10. Cook 3 to 5 minutes or until done; repeat procedure with remaining batter.

Yield: 6 servings (serving size: 1 waffle)
