1/2 cup butter or margarine

1 3/4 cups sugar

2 eggs

1/2 cup oil

1 tsp vanilla

1/2 cup sour milk (Add 1 tsp vinegar or lemon juice to 1/2 cup

milk and stir)

1 tsp baking soda

1 tsp baking powder

6 tbsp cocoa

1/2 tsp salt

2 1/2 cups flour

1 tsp cinnamon

2 cups shredded zucchini

1/2 cup chocolate chips

1/2 cup chopped walnuts

Preheat oven to 325 F.

Cream butter and sugar until light and fluffy. (The butter

should be just room temperature and the mixture should be very

well creamed to insure a light textured cake) Beat in eggs,

oil, vanilla and milk. In a separate bowl, combine baking soda,

baking powder, cocoa, salt, cinnamon and flour. Add to creamed

mixture. Stir in zucchini. Spoon batter into a greased and

floured 9X13 inch pan. (If you use cocoa instead of flour for

this step, you will have a nicer look to the slices and it also

adds flavor to the cake) Sprinkle with chocolate chips and

nuts. Bake for 40 to 50 minutes or until a toothpick inserted

into center comes out clean.

When we are grateful for the good we already have, we attract more good into our life. On the other hand, when we are ungrateful, we tend to shut ourselves off from the good we might otherwise experience. ~Sylvia
