Choctaw Tamales are perfect for parties, birthdays, potlucks, football games, and other gatherings.

Ingredients[]

  • 6 cups Yellow corn meal (or Blue/Purple/White Cornmeal)
  • 2 teaspoons baking soda
  • boiling water
  • corn shucks/Tamale wrappers
  • (Optional: Sweet Version) sliced/mashed berries, grated apple with spices, candied orange peel, vanilla, etc.
  • (Optional: Savory Version) taco meat crumbles, pulled pork, spices, hickory seasoning, etc)
  • (Optional: for drizzling) sweet or savory sauce, fruit sauce, hot sauce, cheese, salsa, edible flowers, etc.

Directions[]

  1. Pour enough boiling water over the meal and soda mixture to make a soft dough which can be handled with the hands.
  2. Prepare 4 to 6 handfuls of corn shucks by pouring boiling water over them to cover, then strip a few shucks to make strings. Tie 2 strips together at ends.
  3. Lay an oval shaped ball of dough on shucks. Fold carefully and tie in the middle with strings. Place in large stew pot and boil 30 to 45 minutes.
  4. Finished!
