  1. Combine all ingredients in a large bowl except the confectioner's sugar.
  2. Use a large wooden spoon or your hands to mix thoroughly.
  3. Refrigerate dough for 30 minutes - a very important step.
  4. Form dough into 1¼-inch balls.
  5. Place 1 inch apart on ungreased cookie sheet.
  6. Bake in preheated 375°F oven for 15 – 20 minutes or until set but not brown.
  7. Do not overcook.
  8. Let stand 1 minute in pan then remove to wire rack.
  9. Cool until barely warm.
  10. Roll in sifted confectioners' sugar.
  11. Cool completely, then just before serving, roll again in the confectioners' sugar.
  12. Do not make them too large or they will not cook properly
