  1. Dice onion, celery, zucchini, and mushrooms into ½" chunks.
  2. Sauté in balsamic vinegar, about 5 minutes.
  3. Add tomatoes; blend in tomato juice, tomato paste, herbs, and garlic.
  4. Simmer for 20 minutes, or until sauce is reduced by ½.
  5. Serve over pasta.
