  1. Beat eggs with milk and cinnamon.
  2. Make 4 sandwiches with apricot jam.
  3. Dip sandwiches into egg mixture, turning once until all moisture is absorbed by bread.
  4. Cook sandwiches on buttered skillet or griddle over low heat until browned on both sides.
  5. Serve hot with maple syrup.
