  1. Combine rice, Sugar, salt, cream, milk and egg yolks in medium saucepan.
  2. Cook over medium heat until thick and creamy, stirring frequently. Remove from heat.
  3. Stir in butter, amaretto and vanilla; cool.
  4. To serve, alternate raspberries with rice pudding in parfait glasses.
  5. Garnish with almonds and mint leaves.
