Clear Onion Soup

2 T. butter 2 medium onions, halved and thinly sliced 2 cups beef or chicken stock or broth (1 pint) Salt and pepper to taste

Long slow cooking of onions develops a mild flavor and bring out their natural sweetness...In pan, melt butter over medium heat. Add sliced onions. Saute until soft but not brown, stirring occasionally, about 5 to 10 minutes. For a milder and sweeter flavor, cover pan and let onions steam cook until softened, stirring occasionally. Add stock or broth and simmer uncovered for 15 to 20 minutes; season to taste with salt and pepper. Ladle into soup bowls and serve piping hot. Serves 2 Source: My Old Recipes
