  1. Wash the spinach thoroughly and trim off the thick stems.
  2. Chop the scallion.
  3. Mince the garlic.
  4. Bring the water to a boil.
  5. Add the meat and bring to a second boil.
  6. Skim off the froth.
  7. Add the spinach, scallion, garlic, soy sauce, salt and pepper.
  8. Lower the flame and simmer for 10 minutes.
  9. Serve immediately.
