coconut Bean Soup

Ingredients

Directions

  1. Sauté the onions in the butter
  2. Add the green peppers and season with curry powder, salt and pepper
  3. Add the tomatoes and simmer for 2 minutes
  4. Add kidney beans, coconut milk and water to the mixture and simmer for 10 minutes
  5. Add the rice and simmer for another 5 minutes
