Ingredients
Crushed garlic| 1tbsp
Canola oil | 30ml
Sliced Onion | 60g
Ocean king prawns | 5 peeled, tails left on
Raw sand crab meat | 60g
Dry white wine | 60ml
Dill | ½ tbsp. roughly chopped dill (1 sprig for garnish)
Roasted capsicum strips | 80g
Butter unsalted | 90g
Spinach | 70g
Linguini | 200g cooked to Al dente
Salt and pepper | pinch of each
turn stove top on to a medium to high heat. Place pan on stove top.
Once pan starts to heat up add canola oil, onion, garlic and ocean king prawns and season.
Allow to onion, garlic and prawns to caramelize a little, add wine, to deglaze the pan and turn stove to medium and allow wine to reduce for 2 minutes.
Once wine has reduced to about half add dill, capsicum, butter and crab meat. Allow butter to melt (do not let butter burn)
Toss through all ingredients until sauce has come together.
Add spinach and linguini and toss through again.
Transfer linguini mixture to a serving dish and top with a little sprig of dill garnish.
