This cheery veggie slaw will brighten up the table. It's fresh and very crisp with soft cranberry bites and a sweet vinaigrette
Ingredients[]
- 1 1/2 cups (375 ml) julienned zucchini (with peel)
- 12 oz. (340 g) bag of broccoli slaw (or shredded cabbage with carrot)
- 1/2 cup (125 ml) silvered green pepper
- 1/2 cup (125 ml) silvered red pepper
- 1/4 cup (60 ml) dried cranberries
- 1/4 cup (60 ml) julienned radish
- 1/4 cup (60 ml) thinly sliced green onion
- 1/4 cup (60 ml) cooking oil
- 1/4 cup (60 ml) frozen concentrated cranberry cocktail, thawed
- 2 tbsp (30 ml) raspberry vinegar
- 1 tsp (5 ml) Dijon mustard
- 1 tsp (5 ml) granulated sugar
- 1/2 tsp (2 ml) salt
- 1/4 tsp (1 ml) pepper
Directions[]
- Toss first 7 ingredients in large bowl.
- Whisk remaining 7 ingredients in small bowl until smooth.
- Drizzle over slaw.
- Toss.
Makes about 8 1/2 cups (2.1 l)
