Cranberry Ice Cream Salad

1 can whole cranberry sauce (1 lb.) 2 large oranges 1 T. lemon juice 1 pkg. orange gelatin 1 pint vanilla ice cream

Break cranberry sauce apart; drain well, reserving all syrup possible. Peel and dice orange sections, reserving orange juice. Combine cranberry syrup, orange juice and lemon juice with enough water to make 1 cup of liquid. heat liquid to boiling; pour over gelatin and stir until dissolved. Add ice cream; mix until well blended. Chill until partially congealed. Fold in cranberry sauce and oranges; pour into mold. Chill until firm. Unmold and garnish with additional orange sections, if desired. Makes 8 servings. Source: Unknown
