Inspired by the famed Waldorf salad, this festively coloured jelly version is filled with green apple, pecans and cranberries. This salad must be prepared several hours in advance, but it can be made the night before your big event.
Ingredients[]
- 3 oz (85 g) box of lime jelly powder (gelatin)
- 1/4 cup (60 ml) granulated sugar
- 1 cup (250 ml) boiling water
- 1/2 cup (125 ml) cold water
- 1 cup (250 ml) chopped frozen cranberries
- 1/2 cup (125 ml) diced celery
- 1/2 cup (125 ml) finely chopped unpeeled tart apple (such as Granny Smith)
- 1/4 cup (60 ml) finely chopped pecans, toasted
- 1/4 cup (60 ml) sour cream
- 1 cup (250 ml) whipping cream
Directions[]
- Put jelly powder and sugar into medium heatproof bowl.
- Pour boiling water over top.
- Stir until jelly powder is dissolved.
- Add cold water.
- Stir.
- Chill for about 1 hour, stirring occasionally, until mixture thickens to syrup consistency.
- Add next 5 ingredients.
- Stir gently.
- Beat whipping cream in medium bowl until stiff peaks form.
- Fold into cranberry mixture until no white streaks remain.
- Pour into greased 6 cup (1.5 l) mold or serving bowl.
- Chill, covered, for at least 6 hours or overnight until firm.
- Looses salad in mold.
- Invert onto serving plate.
Makes about 5 1/2 cups (1.4 l)
