Crawfish or Shrimp Pilaf

Ingredients

• 1 medium onion
• 1 can (4 oz) mushrooms with juice
• ¼ lbs oleo
• salt and pepper to taste
• 1 cup uncooked rice
• 1 bell pepper - chopped
• 1 can Swanson's beef broth
• 1 lbs crawfish or shrimp - peeled
• jalapeño pepper to taste

Directions

1. Combine all ingredients in 1 pot.
2. Bring to a boil and turn down and simmer until rice is cooked.
3. If you have a Hitachi rice cooker, use 1½ cups of rice using the measure supplied with the cooker and turn it on to cook.
4. When it clicks off to warmer, dinner is ready.
