A Catfish recipe.

  1. In a skillet bring water and 2 tablespoons lemon juice to boiling.
  2. Add catfish.
  3. Return to boiling; reduce heat.
  4. Cover and simmer gently for 5 to 7 minutes or until fish flakes easily.
  5. Remove from water.
  6. Cool slightly.
  7. Finely chop cooked fish.
  8. In a bowl combine cooked catfish, eggs, celery, ripe olives, dill pickle, and pimento.
  9. Stir together mayonnaise, horseradish, 1 teaspoon lemon juice, salt, and pepper.
  10. Add to catfish mixture, stirring until well combined.
  11. Chill.
