Makes 8 servings (6 cups).

Ingredients Edit

  • 3 cups cooked rice, cooled
  • 1 12-ounce package frankfurters, sliced
  • 1 1/2 cups sliced celery
  • 3/4 cup chopped Onion
  • 1/2 cup chopped pimientos
  • 1 11-ounce can condensed Cheddar Cheese soup
  • 1/4 cup Mayonnaise
  • 1 tablespoon prepared mustard
  • 1/4 teaspoon ground black pepper
  • 3 hard-cooked eggs, sliced
  • Salad greens (optional)
  • Sliced hard-cooked eggs for garnish (optional)

Directions Edit

Combine rice, frankfurters, celery, Onion and pimientos in large bowl.

Blend soup, Mayonnaise, mustard and pepper; stir into rice mixture. Chill. Serve on salad greens, if desired; garnish with egg slices, if desired.
