- In a bowl, add the flour, and mix in the nutmeg, salt and beaten eggs yolks.
- Stir in the milk, beating constantly so that the mixture is smooth.
- Whisk the egg whites until they are stiff, and add the parsley to this.
- Fold the egg white mix into the batter, mixing well.
- Pour entire mixture into frying pan, and cook as you would a regular omelette (to desired doneness).
