Hummus, a Mediterranean classic, gets an Indian twist with curry powder.
Ingredients[]
- 2 (15-ounce) cans no-salt- added chickpeas (garbanzo beans), drained
- 2 tablespoons water
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 2 teaspoons curry powder
- ½ teaspoon salt
- 4 cups broccoli florets
Directions[]
- Place first 6 ingredients in a food processor; process until smooth.
- Serve with broccoli florets.
Yield: Serves 8 (serving size: ⅓ cup hummus and ½ cup broccoli florets)
