urried red lentils
- 1 Tbs oil
- 1 Chopped Onion
- 2 Tsp Chopped garlic
- 2 Tsp Red curry Powder
- 14 oz Can vegetable broth
- 13.5 oz Can coconut milk
- 16 oz Bag red lentils, Rinsed
- 3 Cups Cauliflower Florets
- 1 Red bell pepper, Coarsely Chopped
- 1 zucchini, Cut in Pieces
heat oil in Saucepan. Add Onion, Saute 4 minutes. or Until Translucent. Add garlic And curry Powder, Cook 1 minutes. Stir Broth, milk, And 1/2 Cup water Into Saucepan. Bring to a Boil. Add Lentils, Cauliflower, pepper And zucchini. Cover And Reduce Heat. Return to a Simmer, Cover And Cook 12 minutes. or Until Lentils And Vegetables Are Tender. Garnish With 1/4 Cup Chopped cilantro. Serve With white rice. Makes 5 Servings.*
