  1. Heat 2 tbsp oil in skillet.
  2. Season meat with ¼ tsp salt.
  3. Sauté 2 minutes each side.
  4. Remove, keep warm.
  5. Add remaining oil to skillet.
  6. Sauté peppers, potatoes, onion 6 minutes.
  7. Add curry, ginger, red pepper, remaining salt, sauté 2 minutes.
  8. Add water, cover, cook 6 minutes or until potato is tender.
  9. Add meat, heat.
  10. Serve.
