Every surfer knows that the best time to hit the waves is early in the morning, and David is no exception. An experienced surfer, he knows how to work up a good appetite. And the perfect meal to satisfy the hunger of a radical surf session: “dawn patrol.” One of the most popular local Hawaiian dishes known outside of the islands, the loco moco was created in the 1940s in Hilo, Hawai‘i, by a group of very hungry boys low on money after spending the day at the beach. A hearty meal, this one might even leave Stitch feeling full!

  1. Mix together the ground beef, Worcestershire sauce, salt, garlic powder, and pepper in a large bowl.
  2. Form the mixture into patties by grabbing a handful of meat and rolling it into a ball.
  3. Press the meat down to flatten it out. Smooth the edges so there aren’t any cracks or jagged edges.
  4. The patties should come out to at least 1 inch thick. (Note: Try to keep the patties large, since they will shrink when fried.)
  5. Heat a large frying pan over medium heat.
  6. Fry each side of the patties for about 3 to 5 minutes, or until well done.
  7. Set each finished patty on a plate lined with paper towel to catch any extra grease.
  8. Mix the beef stock, soy sauce, Worcestershire sauce, ketchup, and cornstarch in a small to medium bowl.
  9. Whisk the mixture until the cornstarch has come off of the bottom of the bowl.
  10. Using the same pan that you cooked the meat in, melt 1 tablespoon of the butter over medium heat and add the onions.
  11. Cook the onions for about 1 minute, then add the mushrooms and fry for 1 to 2 minutes, or until browned.
  12. Melt the remaining 1 tablespoon of butter and add the gravy mix to the pan.
  13. Keep stirring the gravy until it begins to thicken and simmer, about 5 minutes.
  14. In a medium frying pan over medium heat, melt the butter.
  15. One at a time, crack in the eggs and cook sunny side up over medium heat (or you can switch it up to your preference!), then set aside.
  16. Scoop a generous serving of cooked white rice on a plate.
  17. Add one hamburger patty and then drizzle on the gravy.
  18. Top it with the egg and garnish with green onions.
  19. Place the pineapple slices along one side of the dish, but not in the gravy.
  20. That’s up to the hungry surfer!
