Ingredients[]
- 2 lbs ground beef or lamb or both
- 4 green onion, finely chopped
- 1 cup garlic, minced
- 1 tsp oregano
- ¼ tsp cumin
- ¼ tsp parsley
- 1 tsp salt
- ¼ tsp pepper, freshly ground
- 8 large pita
Tzatziki sauce[]
- 1 cup yogurt
- 1 tbsp mayo
- juice of 1 lemon
- 2 scallions including green tops, (finely chopped)
- cucumber (minced)
- 5 cloves garlic (minced)
Directions[]
- Mix all ingredients except pita, mixing well and kneading until mixture is stiff.
- On skewer pack meat mixture about 5" long and not more than 2" in diameter.
- Put as many "fingers" as possible on a skewer leaving a 1" space in between.
- Cook over hot coals 10 – 15 minutes, turning frequently.
- Take pita and slide gyro into center.
- Drizzle with sauce.
- Fold over to eat.
