Description Edit Ingredients Edit 1 x 4-lb. duck 1 x tin pineapple slices 2 tbl oil 2 tbl soy sauce 1 tbl rum 1/2 cup water 2 tbl brown sugar 1 pch salt Directions Edit Clean and roast the Duck. Cool, remove bones and slice. Drain pineapple slices and dice. Place Duck and pineapple in alternate layers in a casserole. Add the pineapple juice mixed with oil, soy sauce, rum, water, Sugar and salt. Bake in moderate oven for 1 hour. Serve with rice and green salad.
