This is a delicious salmon dish for a holiday dinner.

  1. Thaw fish, if frozen.
  2. Rinse fish; pat dry with paper towels.
  3. In a small bowl stir together lemon peel, lemon juice, pepper, and garlic.
  4. Preheat broiler.
  5. Place fish on the greased unheated rack of a broiler pan.
  6. Brush with half of the lemon juice mixture.
  7. Broil 4 inches from the heat for 5 minutes.
  8. Using a wide spatula, carefully turn fish.
  9. Brush with the remaining lemon juice mixture.
  10. Broil for 3 to 7 minutes more of until fish flakes easily when tested with a fork.
  11. Cut the fish into 2 portions.
  12. Sprinkle with the green onion and serve with orange slices.
