- ½ cup diced raw carrots
- ¼ cup diced bell pepper (preferably red)
- ¼ medium onion, diced
- 2 medium-sized juicy tomatoes, deseeded and chopped (Do not use Italian tomatoes, too dry)
- 1 garlic clove
- juice of ½ lime
- 10 – 15 sprigs cilantro (leaves only)
- salt and chile peppers to taste
- Toss all the ingredients above together in a bowl.
