  1. Combine onions, celery, relish, rice, eggs, Mayonnaise, salt and pepper.
  2. Chill.
  3. Fill custard cups or individual molds with salad mixture, pressing down firmly with spoon.
  4. Unmold on lettuce leaves.
  5. Garnish with ripe olives and tomato wedges, if desired.
