- Breaded and Fried Eggplant Cutlets
- grated mozzarella
- sesame seed roll
- 3 slices of prosciutto
- half of a canned / preserved roasted red pepper
Place several slices of eggplant on a dinner plate and sprinkle with grated mozzarella. Microwave until the cheese has melted. Place on the sesame seed roll, layer prosciutto slices, and top with the flattened roasted red pepper.
