Eggplant with Garlic

Description

In Romanian: Mincare de vinete cu usturoi.

Ingredients

• 3 – 4 medium eggplants
• 4 onions
• 5 garlic cloves
• 4 tomatoes
• 3 tablespoons oil
• salt

Directions

1. Bake the eggplants, peel while hot and let drain.
2. Separate into strips.
3. In a pan, arrange a layer of eggplant, then a layer of peeled and sliced tomatoes.
4. Sprinkle some of the chopped garlic and some salt.
5. Then another layer of eggplant, tomatoes, chopped garlic and salt.
6. Follow this procedure until all eggplants and tomatoes are used up.
7. Fry the thinly sliced onions in oil.
8. Put the onions aside and pour the oil onto the eggplants and tomatoes in the pan.
9. Bake until the garlic softens.
10. Let cool, arrange on a plate and sprinkle the fried onions on top.
11. Serve cold.
