Eierkoeken (egg cakes) are well known all over the Netherlands. They are a nice dessert, or can be eaten in those snacking moments during the day.

  1. Preheat oven to 350 F/180 C.
  2. Beat the eggs with the sugar until the crystals have dissolved. This may require the addition of a little warm water.
  3. Add vanilla.
  4. Add sifted flour and baking powder.
  5. The dough should be the right consistency for piping. If it is too stiff add a little warm water but this should not be runny.
  6. Pipe small round shapes on a cookie sheet lined with baking paper, dust with powdered sugar and bake for 15–20 minutes.
