Elegant Chicken Breasts

3 whole large chicken breasts, about 3 lbs. total, skinned and halved lengthwise 3/4 cup unsweetened pineapple juice 1 1/2 t. sugar 1/4 t. dried tarragon, crushed 2 t. cornstarch Paprika

Put chicken in skillet. Mix pineapple juice, tarragon, sugar and 1/2 t. salt. Pour over chicken. Cover. Cook over low heat 25 minutes or until chicken is done. Transfer chicken to platter to keep warm. Skim excess fat from mixture in skillet. Mix cornstarch and 1 T. cold water. Stir into sauce in skillet. Cook and stir until bubbly. Cook and stir 2 minutes more. Drizzle sauce over chicken. Sprinkle with paprika. Trim with parsley if desired. Serves 6 Source:My Old Recipes
