• Farmer's Breakfast* 4 potatoes

4 strips of bacon 3 large eggs 3 tablespoons milk 1/2 teaspoon salt 1 cup diced ham<> 2 tomatoes, thinly sliced 1 tablespoon sliced green onion<>

  1. In a large

pot<>over medium-high heat bring plenty of cold salted water to a boil. Add

  potatoes and boil for 30 minutes until tender but still firm. Remove from
  heat. Rinse under cold water, and set aside to cool enough to handle. Peel
  and slice; set aside.
  2. In a large skillet,

cook<>bacon over medium heat until transparent and limp. Add potato slices and

  cook until lightly browned 5 to 10 minutes.
  3. Meanwhile, in a medium bowl beat eggs with milk and salt. Stir in
  ham and tomato. Pour over potatoes in skillet. Cook until eggs are set,
  about 8 minutes. Garnish with green onions to serve.

Makes 4 servings.
