- Farmer's Breakfast* 4 potatoes

1. In a large
pot<http://www.cooksrecipes.com/breakfast/farmer%27s_breakfast_recipe.html#>over medium-high heat bring plenty of cold salted water to a boil. Add
potatoes and boil for 30 minutes until tender but still firm. Remove from heat. Rinse under cold water, and set aside to cool enough to handle. Peel and slice; set aside. 2. In a large skillet,
cook<http://www.cooksrecipes.com/breakfast/farmer%27s_breakfast_recipe.html#>bacon over medium heat until transparent and limp. Add potato slices and
cook until lightly browned 5 to 10 minutes. 3. Meanwhile, in a medium bowl beat eggs with milk and salt. Stir in ham and tomato. Pour over potatoes in skillet. Cook until eggs are set, about 8 minutes. Garnish with green onions to serve.
Makes 4 servings.
