This is a Crisp, Fried Cookie. Makes 4 Dozen. Takes 40 minutes, with 10 minutes Prep
Ingredients[]
- 6 Egg yolks
- 1/2 Teaspoon salt
- 1/3 Cup light cream
- 1 Tablespoon Melted butter
- 1/3 Cup granulated sugar
- 2 1/4 Cups flour
- 1/2 Teaspoon Ground nutmeg
- 1 Tablespoon Grated lemon rind
- icing sugar
Directions[]
- Beat together egg yolks and salt until thick and light.
- Beat in cream, sugar and butter.
- Sift together flour and nutmug
- Add to egg yolk mixture with lemon rind.
- Mix well
- Chill for at least 1 hour.
- Divide dough into quarters; keep remaining dough cold as you work with each portion
- Roll each quarter 1/16inch thick
- Cut in 1-1/2 inch wide strips, and then diagonally into 4-inch sections
- Make a 1-inch slit, lengthwise, in the center of each strip, and slip one end through
- Heat oil in a deep fryer to 350F and fry, a few at a time, for 1-2 minutes or until golden
- Remove from oil with a slotted spoon and drain on paper towels
- Sprinkle with icing sugar
- Store in an airtight container
