This is a Crisp, Fried Cookie. Makes 4 Dozen. Takes 40 minutes, with 10 minutes Prep

  1. Beat together egg yolks and salt until thick and light.
  2. Beat in cream, sugar and butter.
  3. Sift together flour and nutmug
  4. Add to egg yolk mixture with lemon rind.
  5. Mix well
  6. Chill for at least 1 hour.
  7. Divide dough into quarters; keep remaining dough cold as you work with each portion
  8. Roll each quarter 1/16inch thick
  9. Cut in 1-1/2 inch wide strips, and then diagonally into 4-inch sections
  10. Make a 1-inch slit, lengthwise, in the center of each strip, and slip one end through
  11. Heat oil in a deep fryer to 350F and fry, a few at a time, for 1-2 minutes or until golden
  12. Remove from oil with a slotted spoon and drain on paper towels
  13. Sprinkle with icing sugar
  14. Store in an airtight container
