Fava - broad bean purée

  1. Soak dried fava beans overnight then boil in 3 cups of water until mushy.
  2. Place fava beans and all the rest of the ingredients in a blender (or mix well by hand) and pour into two deep platters.
  3. When set, cut into squares and serve with and parsley as garnish.
