A refreshingly light option for your holiday main course. Freshly flavoured with dill and lemon, firm haddock is paired with pretty red pepper and green onion strips.

  1. Cut 4 sheets of parchment paper, about 15 inches (38 cm) long.
  2. Arrange fillets in centre of each sheet.
  3. Combine next 5 ingredients in small cup.
  4. Spread over fillets.
  5. Arrange red pepper and green onion over top.
  6. Bring edges of parchment paper together over seafood to enclose.
  7. Fold ends together several times to seal completely.
  8. Arrange on baking sheet with sides.
  9. Cook in 400°F (205°C) oven for about 12 minutes until fish flakes easily when tested with fork.
