A refreshingly light option for your holiday main course. Freshly flavoured with dill and lemon, firm haddock is paired with pretty red pepper and green onion strips.
Ingredients[]
- 1 lb. (454 g) haddock fillets, any small bones removed
- 1 tbsp. (15 ml) cooking oil
- 1 tsp. (5 ml) chopped fresh dill (or 1/4 tsp, 1 ml, dried)
- 1/4 tsp. (1 ml) grated lemon zest
- 1/8 tsp. (0.5. ml) salt
- 1/8 tsp. (0.5 ml) pepper
- 6 thin red pepper slices, halved
- 4 green onions (green part only), cut into 3 pieces each
Directions[]
- Cut 4 sheets of parchment paper, about 15 inches (38 cm) long.
- Arrange fillets in centre of each sheet.
- Combine next 5 ingredients in small cup.
- Spread over fillets.
- Arrange red pepper and green onion over top.
- Bring edges of parchment paper together over seafood to enclose.
- Fold ends together several times to seal completely.
- Arrange on baking sheet with sides.
- Cook in 400°F (205°C) oven for about 12 minutes until fish flakes easily when tested with fork.
