Feta Cheese Dip

Makes at least 6 servings

Time: 10 minutes

To convert this dip to a spread, use cream cheese in place of sour cream and add about 1 T of freshly squeezed lemon juice. If you like a very smooth dip, use a blender or food processor to combine the ingredients.

About 1 C crumbled feta cheese

1 C sour cream

2 T minced scallion

2 T minced fresh parsley, plus some more

� t minced garlic (optional)

1 t minced fresh marjoram or oregano leaves or � t dried

� t minced fresh thyme leaves or � t dried thyme

Lots of freshly ground black pepper

Salt to taste (optional)

Freshly squeezed lemon juice to taste (optional)

  1. Combine all ingredients except the salt and lemon juice and mash
  with a fork or potato masher.  Taste and add salt and lemon juice if
  2. Garnish with extra parsley and serve immediately, with bread,
  crackers, pita, or vegetables, or cover and refrigerate for up to a day.
