Fig Sticks - 8.24g Carbs, 1.54g Fiber

Yield: 80 pieces From: The Diabetic Dessert Cookbook by Coleen Howard

4 cups fresh, whole figs 2 cups almonds 1 cup sesame seeds

Place the figs and almonds in a grinder. Grind together. Mix thoroughly. Place the mixture on waxed paper and roll to 1/8-inch thick. Cut into rectangular bars 1-inch wide by 3-inch long. Place sesame seeds in the center of each bar. Fold sides into the middle, over the sesame seeds. Roll to 1-inch diameter. Cut 3/4-inch in length.
