Five types of tomatoes dressed with a vinegar-oil-herb-and-mustard dressing.

Dressing[]

  1. For dressing, combine the olive or salad oil, vinegar, green onion or chives, basil, sugar, mustard, and salt in a screw-top jar.
  2. Cover and shake well.
  3. Chill, if desired.

Salad[]

  1. To serve, line a serving platter with spinach leaves.
  2. Arrange tomatoes on platter.
  3. Shake dressing well; drizzle over tomatoes.
  4. Sprinkle crumbled cheese on top of tomatoes.
  5. Sprinkle with pepper.
