  1. Melt butter in a saucepan, add onions and cook over a medium heat until tender and lightly browned.
  2. Add stock, beef consommé, and pepper.
  3. Bring to boil and simmer for 20 minutes.
  4. Serve hot, sprinkled with cheese.
