  1. Wash spinach thoroughly.
  2. Break off stems and measure 1 quart.
  3. If leaves are large, tear into bite-sized pieces.
  4. Shake spinach in towel to dry well.
  5. Arrange attractively with other vegetables, eggs, and rice in salad bowl.
  6. Chill.
  7. When ready to serve, season, add dressing and toss lightly.
