We found fresh sugar snap peas at the local produce market, and discovered they make a cheerful salad with a quick and tasty onion dressing. —Courtney Stultz, Weir, KS
Ingredients[]
- 2 Tbsp. olive oil
- 2 Tbsp. white wine vinegar
- 2 tsp. honey
- ½ tsp. salt
- ½ tsp. pepper
- ¼ tsp. dried thyme
- ½ cup chopped onion
- ½ tsp. poppy seeds
- 1 lb. fresh sugar snap peas, trimmed and halved (about 4 cups)
Directions[]
- Place the first 7 ingredients in a blender; cover and process until blended.
- Transfer to a large bowl; stir in poppy seeds.
- Add peas to dressing and toss to coat.
- Refrigerate, covered, 30 minutes before serving.
